      Kuih Lapis / Layered Kuih

      Ingredients
      2 cups rice flour
      1/2 cup all-purpose flour
      1/2 cup cornflour
      1 cup granulated sugar
      4 cups coconut milk (from 1 coconut)
      1/4 tsp salt
      Few drops red food colouring

      Method
      1. Heat coconut milk until lukewarm.
      2. Combine all flours, sugar and salt in a bowl.
      3. Pour coconut milk and stir well.
      4. Strain into two jugs, about 600ml each.
      5. Add red colouring to one portion.
      6. Place a greased 20cm round baking tin into a steamer.
      7. Pour about 200ml of white mixture into the tin. Cover and steam until set.
      8. For 2nd layer, pour about 200ml of red mixture. Cover and steam until set.
      9. Repeat steaming until mixture is used up.
      10. Set aside to cool then slice and serve.
